2 large peaches
4 slices bacon
1. Preheat oven to 400 degrees F. Spray a cookie sheet with non-stick cooking spray, set aside.
2. Cut peaches into quarters. Next, cut bacon strips in half and wrap one-half of a bacon strip around each peach quarter.
3. Place bacon-wrapped peaches seam-side down on cookie sheet, about one inch apart. Bake in oven for approximately 15 to 20 minutes, flipping over once at the halfway point. Bake until bacon is crisp.
4. When peaches are done and still hot, remove from the oven and sprinkle each peach with a pinch of brown sugar and fresh thyme.
