Chili and Vinegar Herring with Potato Saladfrom Andreas Viestad
The healthiest dish on earth?
4 Herring fillets, lightly salted
4-5 tbsp Red wine vinegar
1-2 tsp Red chili, finely chopped and deseeded
2 tsp Chives
Ground black pepper, to taste
Small almond potatoes, boiled and cut in half
3 generous tbsp Sour cream
2 tsp Mustard
2 tbsp Scallion, thinly sliced
1 tsp Chives, thinly sliced
This is how you do it:
Place the herring onto a plate and drizzle with vinegar. Let it marinate for a few minutes while making the potato salad.
In a bowl, combine the potatoes, sour cream, mustard, scallions and chives and toss together until thoroughly mixed.
Plate the fish and sprinkle with chili and chives.
Serve with potato salad.
